Today I am sharing the Oreo Surprise Cupcakes that I made for our Church Camp Auction. If you remember, last week I shared the “He is Risen wood plaque” that we donated to the auction. I wanted to make something with mint and green since it was before St. Patrick’s Day, so what better item than mint Oreo cupcakes?
I decided I would make these Oreo cupcakes with a cake box mix. I also added an extra surprise of Andes mint candies.
I mix the cake mix according to box directions. Placed a teaspoon size amount of cake batter in the bottom of my muffin paper. Placed a Oreo on op of the batter, followed by an Andes mint candy and fill cupcake paper with additional batter.
It can’t get any easier than that! I baked according to the cupcakes directions on the box.
I decided to make my own version of a cream cheese frosting:
4 tablespoons butter(soften)
8 ounces of cream cheese(softened)
4 1/2 cups powered sugar
4 tablespoons water
1 teaspoon vanilla extract
1 teaspoon mint extract
green food coloring(optional)
crushed Oreos(optional)
I use a kitchen gadget for the frosting. I love kitchen gadgets! I am always a sucker for a new gadget. I am the person who has the fun little storage containers for your lemons, limes, tomatoes. You know the ones they sell at the grocery store that has sucker written all over the pop up display sign. I have an easy accent decorator by Pampered Chef. I needed to complete about 6 more cupcakes and I had a blow out. The ring on my easy accent decorator broke, a small piece of plastic broke off the ring. I had a few options to complete the icing task. Ice the cupcakes by hand, NOT, they would not be as pretty as the others. Use the pastry bag icing decorator, NOT, I hate to use this thing. I decided to duct tape the ring back on the easy accent decorator. I loaded the remaining icing into the decorator and placed duck tape around the ring. The duct tape was not sticking as well as I thought it should, I continued by holding the ring in place with the tape and my somewhat other free hand. Not an easy task, but I completed the task. I am really hoping that I can buy a replacement ring for my easy accent decorator. I don’t want to have to buy an entire decorator.
The cupcakes were a huge success! These Oreo Surprise Cupcakes will be a keeper in our family. What are your family favorite cupcakes?
