~ Pecan Pie Muffins ~ I originally shared this post on Cheerios and Lattes with the intention of sharing with my readers. I forgot, so here it is, better late than never.
I have Georgia southern roots running through my blood, so of course I love to bake with pecans. I want to share this great recipe that I received from my Aunt Laverne. My Aunt Laverne has pecan trees on her property in Georgia and I usually received a big box of Georgian pecans every year. I use pecans in most of the recipes that call for some type of nuts. My son came home from a visit with all the relatives in the South and raved about these muffins, so now I want to share with you!
5 simple ingredients is all you need for these Pecan Pie muffins:
1 cup packed brown sugar
1/2 cup all-purpose flour
1 cup chopped pecans
2/3 cup melted butter(no substitutions)
Mix the first three ingredients together in a mixing bowl and set aside. Combine melted butter and eggs, mixing well. Add egg mixture with flour mixture until moistened. Coat mini muffin pan with cooking spray and flour. Fill each opening with batter to 2/3 full. Bake at 350 degrees for 16 minutes, remove to cool. Makes 24 mini muffins.
I made a double batch of the muffins so I could share with my small group and still have enough for my boys to enjoy. Since they are a mini size muffin, they are easy to grab and enjoy with a glass of milk. These pecan pie muffins did not last long!
